Dawn dish detergent works by using surfactants, which are molecules that lower the surface tension of water and help to break down and lift away grease and grime. The hydrophobic (water-repelling) end of the surfactant molecule binds to oils and fats, while the hydrophilic (water-attracting) end binds to water, allowing the grease to be emulsified and rinsed away.
